One of my favorite things I make for Thanksgiving is my cranberry pomegranate relish. Its so refreshing and full of antioxidants, vitamin C, protein from the nuts and cleansing power! So many inboxed me today on fb for the recipe, I decided to blog it! Enjoy!
1 1/2 bag of fresh cranberries
2 whole pomegranates
1 cup of chopped celery
1 cup of chopped pecans or walnuts
1 cup of fresh pineapple chopped small and save all the juice or use crushed in its own juice.
1 whole orange minced with juice
2 T. organic can sugar as sweetener
1 t.cinnamon powder
(I like to make this in my food processor….makes it so much easier)
Chop cranberries in food processor
cut pomegranates in half and dig out all the little pomegranate seeds (you can now buy them already hauled)
Mix cranberries, pomegranate seeds, celery, nuts, pineapple, oranges, juices and cinnamon together
Make the day before and store in refrigerator over night.
Will last several days refrigerated
